Healthy Breakfast Muffins
Oh how I love you, Friday. If you're anything like me, I start looking forward to Saturday's breakfast right around 3pm on Friday afternoon. I'm a HUGE fan of any weekend where I have enough time to sleep in and make brunch. That said, I don't always have time for such a big production. That's why I often turn to these quick, easy breakfast muffins!
I found this recipe in college on Pinterest and it immediately became a staple. It's also a great way to use up old bananas. Sadly, the website that had this fabulous recipe shut down! I preserved the steps I use from memory, so it's a little trial and error - but bear with me, I don't think you'll be disappointed. I'm posting this because I think it still deserves to live on the internet :)
If you want to go sugar free, skip the chocolate chips and add a dash of honey. There's no added sugar anywhere else so I think the choc. really helps give it some yummy flavor, but blueberries work nicely too! Bonus for this recipe, all of the ingredients are stuff I usually have on hand anyways, so these are super easy to throw together.
